SFH Food 2018-01: My Mom & Pimento Cheese

My Mom sometime in the 1930s

February is my Mom’s birthday month. When I think of the best of Southern tradition and style, and sometimes sassiness, that was my Mom. She was filled with a joy for life and good food. One of her favorite dishes was Southern-style pimento cheese. Perhaps that is why it is one of my favorites as well.

So, let me share with you my adaptation of an allrecipes version of Southern Pimento Cheese. (For the original recipe, see Southern Pimento Cheese)

Ingredients

  • 2 cups shredded medium Cheddar cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise [See note 1]
  • 1/4 teaspoon ground cayenne pepper (optional)
  • 1/4 teaspoon onion powder
  • 1 jalapeno pepper, seeded and minced (optional)
  • 1 (4 ounce) jar diced pimento, drained [See note 2]
  • salt and black pepper to taste

Directions

Place the Cheddar cheese, cream cheese, mayonnaise, cayenne pepper, onion powder, minced jalapeno, and pimento into a large bowl. Using a portable mixer, beat at medium speed, until thoroughly combined. Season to taste with salt and black pepper. Then refrigerate.

  1. Mayaonnaise – My Mom would only use Hellmann’s Mayonnaise. She said it was the best and I have to agree.
  2. Pimento – Sometimes I prefer not to drain.
