Manhattan Clam Chowder

Ingredients
- • ¼ cup finely chopped bacon or salt pork (O1, O2)
- • 1 small onion, finely chopped (¼ cup), (O1, O2, O3)
- • 2 cans (6.5 oz each) minced or whole clams, undrained (O1, O2, O3)
- • 2 medium potatoes, diced (2 cups), (O1, O2, O3)
- • 2-3 medium carrots, chopped, (O2, O3)
- • ⅓ cup chopped celery (O1, O2, O3)
- • 1 cup water (O1)
- • 8 oz bottled clam juice (O2, O3)
- • 8 oz vegetable broth, clam juice substitute (O2, O3)
- • 2 teaspoons chopped fresh parsley (O1, O2, O3)
- • 1 teaspoon chopped fresh or ¼ teaspoon dried thyme leaves (O1, O2, O3)
- • ¼ teaspoon salt (O1, O2, O3)
- • ⅛ teaspoon pepper (O1, O2, O3)
- • 1 can (14.5 oz) whole tomatoes, undrained (O1, O2, O3)
- • Olive oil (O3)
Instructions
- O1, O2 - In 4-quart Dutch oven, cook bacon and onion over medium heat 8 to 10 minutes, stirring occasionally, until bacon is crisp and onion is tender; drain off fat.
- O3 - In 4-quart Dutch oven, saute onion over medium heat 8 to 10 minutes, stirring occasionally, until onion is tender.
- O1, O2, O3 - Stir in clams, potatoes, celery and water (or clam juice, or vegetable broth) . Heat to boiling; reduce heat. Cover and simmer about 10 minutes or until potatoes are tender.
- O1, O2, O3 - Stir in remaining ingredients, breaking up tomatoes with a fork. Heat to boiling, stirring occasionally.
